Why Kurma Mariami AA works in the kitchen when fresh rotab doesn’t
We deal mostly in fresh rotab — Mozafati Bam at the soft, dark rutab stage, sold fast because it doesn’t keep. Kurma Mariami AA is a different product: dried down to where it’s shelf-stable, which is exactly what makes it the better choice for cooking rather than eating on its own.
Moisture is the whole difference
Fresh rotab is close to 70% moisture at the rutab stage — that’s why it’s soft enough to eat with a spoon and why it spoils within days outside the fridge. Mariami AA has had most of that water taken out, so it holds its shape when you cook with it, doesn’t dissolve into liquid in a pan, and sits in a jar for months without going off. If a recipe calls for cooking dates down into a sauce or filling, you want the dried grade, not the fresh one.
Where Mariami AA earns its place
Chopped and simmered with a little water, it breaks into a thick paste for glazing grilled chicken or lamb — the sugars caramelise on the heat instead of just melting away like fresh rotab would. Stuffed with a cube of cheese or a toasted nut, it holds together on a serving plate for hours, which fresh rotab can’t do once it’s been opened. Diced into rice — nasi minyak, a pilaf, even fried rice — it keeps its shape through the cooking time instead of turning to mush.
A savoury use most people skip
Try it in a marinade base: blend a handful of Mariami AA with vinegar, garlic, and black pepper, and use it in place of some of the sugar and acid in a regular marinade. It’s a common move in Middle Eastern cooking that doesn’t get much attention in Malaysian kitchens, where dates are treated as a Ramadan-only sweet.
What we’d tell a buyer
If someone asks us for dates to cook with, we point them to a dried grade like Mariami AA rather than our own rotab stock — it’s simply the right tool. Our Rotab Mozafati Bam wholesale pricing guide covers the fresh side of the business; for choosing a reliable dried-date supplier generally, see our supplier selection guide. And the same Kurma Mariami AA also turns up in a Ramadan dessert roundup we published earlier, for anyone after the sweet side instead.
