Rotab is a different product from the dates most suppliers sell
Nearly every dates supplier in Malaysia sells tamr — the fully dried, shelf-stable stage most people picture when they hear “kurma.” Ruthob (rotab) is one stage earlier: soft, wet, still holding much of its natural moisture, closer to fresh fruit than to a dried snack. It’s a genuinely different product, not just a fresher version of the same one, and Mozafati from Bam is one of the varieties most associated with it.
Why so few suppliers carry it
Tamr can sit at room temperature or in modest cold storage for months. Rotab can’t — left unrefrigerated, it ferments within days. That means it has to be frozen almost immediately after harvest and kept frozen through export, customs clearance, and distribution, then sold either still frozen or briefly thawed. Most suppliers don’t bother with that chain for a product that’s a small slice of total demand; the ones who do are usually specialists, not general dates traders.
This is also why rotab rarely shows up loose at a wet market stall. It’s almost always sold pre-packed and frozen, and a buyer picking it up should expect ice crystals in the bag, not a soft, room-temperature texture — that’s normal for how it’s handled, not a sign of poor quality.
What buyers actually get
Texture is the main draw: rotab is closer to a fresh plum than to a chewy dried date, with a milder, less concentrated sweetness because the sugars haven’t finished converting the way they do in tamr. Some buyers seek it out specifically for that difference; others try it once and go back to tamr. It’s worth knowing this before ordering a case, since it’s not a substitute for the dried dates most recipes and hampers call for.
Composition, without the extra claims
Rotab carries the same base minerals as tamr — potassium, magnesium, iron — but at a different concentration because of the higher water content. Lower sugar density by weight is a taste and storage fact, not a health claim; anyone buying dates for a specific dietary reason should treat that as ordinary food information, not medical advice.
Sourcing rotab through a Malaysian supplier
