Pomegranate and soft rotab dates come from the same part of the world and the same autumn season, and putting them on a plate together works because they pull in opposite directions on taste.

Tart against very sweet

Rotab, the soft fresh-date stage before it dries into a normal date, is heavy and sweet with almost no acidity. Pomegranate arils are the opposite — bright, a little sour, with a firm pop rather than a soft bite. A simple way to serve it

Halve the pomegranate, deseed it into a bowl by cracking it open under water so the pith floats free, then scatter a spoonful of arils over each portion of rotab just before serving — not earlier, since the juice will start to soften the dates and turn the plate wet if it sits.

A rotab date that’s still slightly firm at the shoulder and a pomegranate that feels heavy for its size are both signs of fruit bought close to harvest rather than fruit that’s been sitting. Buying them at the same time, from the same source, is a reasonable check that you’re getting a fresh batch of each rather than old stock of one propped up by fresher stock of the other.

Storage once you’ve paired them

Keep the two separate until the moment you serve. Rotab left touching wet arils turns sticky and starts to ferment faster than it would on its own; arils left loose in the same container as rotab pick up moisture from the dates and go soft within a day.
