Date Cookies Are a Super Easy Treat to Make

One of my favorites when it comes to cookies is date cookies. They’re soft, gooey and just so delicious. The great thing about these little treats is that they’re so easy to make that even a total beginner can whip them up. With that said, I’m going to show you how to make a batch of date cookies so you can enjoy them this holiday season.

For best effect and to make sure that everything is perfect, use either a pastry board or a hand mixer to whip up your date cookies. Cream the sugar and butter together, and add the dry ingredients. Once you have a nice smooth cookie dough, simply fold in the chopped pecans. The result will be chewy, gooey and absolutely delicious date cookies perfect for the holidays!

Now let’s get started on the decorating. You can start off by placing a small round pan on a flat surface. This would be a great choice if you want something a bit more extravagant than your basic cookies. You can also find pans with removable bottoms and cookie presses at the grocery store. If you’d rather go with something more traditional, try using a melon baller or even a tablespoon and a cookie scoop for a more authentic look.

The next step is to gather your supplies. You’ll need a large mixing bowl set (or an electric beaters), a tablespoon of brown sugar, a pinch of salt and a date cookie recipe of your choice. These vary widely from cookbook to cookbook, but typically you’ll have something simple like vanilla or chocolate chips, and maybe some sprinkles of nuts. If you want to go all out, you can substitute peaches, mangoes, blueberries, cranberries or raspberries for your dates. I personally like to use frozen fruit in my recipes, so try that to save yourself some calories.

Once you have all your supplies gathered and ready to go, it’s time to head over to the grocery store and pick up some of your favorite ingredients. A good mix of brown sugar and packed date palms makes for some incredibly delicious cookies. If you’re looking to keep things as simple as possible, choose a recipe without any extras. One such delicious recipe is one that I found online and it only requires brown sugar, vanilla and a touch of chocolate chips. This is also a fantastic way to practice your baking skills because once you taste the delicious cookies, you’ll be hooked!

Once you’ve got your supplies assembled, you’re ready to begin preparing your cookies. In a large bowl, combine the brown sugar, dates and chocolate chips until smooth and creamy. Use a rubber spatula to gently mix the mixture until combined into a ball of dough. Place the ball of dough into an ungreased bowl and place into the stand mixer fitted with a paddle attachment.

Use the paddle attachment to mix the dough until it reaches the desired consistency – cake-like in texture. Once you’re happy with the consistency, turn the mixer on to beat the dough until it begins to form oatmeal cookies. Once the cookies are done, remove them from the mixer and place into an ungreased baking pan and pop into the oven at pre-set temperature.
